  • 1 cup cottage cheese
  • 1 cup fresh spinach, chopped
  • 0.5 cup bell pepper, diced
  • 0.5 cup shredded cheese (like cheddar or mozzarella)
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Cooking spray or oil, for greasing the muffin tin

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a large bowl, whisk together the eggs until well combined. Then stir in the cottage cheese, chopped spinach, bell pepper, garlic powder, and shredded cheese. Season with salt and pepper to taste.
  3. Carefully pour the egg mixture into each muffin cup, filling them about three-quarters full to allow for rising.
Baking
  1. Place the muffin tin into the preheated oven and bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
  2. Remove the muffin tin from the oven and allow the egg bites to cool slightly before removing them. Enjoy warm or at room temperature!

Notes

These egg bites can be paired with a side salad, whole-grain toast, or fresh fruit. They are great for meal prep and can be stored in the refrigerator for up to 5 days or frozen for up to a month.
