  • 2 cups almond flour Can substitute with coconut flour, reduce quantity to 1/2 cup.
  • 1/2 cup erythritol Or sweetener of choice.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup cottage cheese Ensure well-blended for an even texture.
  • 4 large eggs
  • 1 teaspoon vanilla extract
Fruit Addition
  • 1 cup blueberries Fresh or frozen (thaw if using frozen).

Preparation
  1. Preheat your oven to 350°F (180°C) while you prepare the batter.
  2. In a large bowl, combine the almond flour, erythritol, baking powder, baking soda, and salt. Mix well.
  3. In a separate bowl, whisk together the eggs, cottage cheese, and vanilla extract until smooth and creamy.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
  5. Gently fold in the blueberries until evenly distributed.
  6. Pour the batter into a greased loaf pan, smoothing the top.
Baking
  1. Place in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

For lower-carb options, swap almond flour for coconut flour. Avoid overmixing the batter.
