  • 1/4 cup sour cream Cream cheese can also be added for creaminess.
  • 1 teaspoon lime juice Freshly squeezed lime juice adds a zesty kick.
  • 1 teaspoon chili powder Adjust the amount based on spice preference.
  • 1/2 cup chopped fresh cilantro (optional)
  • 1/2 cup grated parmesan cheese (or queso fresco)

Preparation
  1. If using fresh corn, cut the kernels off the cob. If using frozen, ensure it's thawed and drained.
Making the Sauce
  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper. Stir until well mixed.
Combining Ingredients
  1. Add the corn to the sauce mixture. Gently fold in chopped cilantro if using, ensuring everything is evenly coated.
Serving
  1. Spoon the mixture into small cups. Top with parmesan cheese and any of your chosen toppings like diced tomatoes or jalapeños for a spicy kick.

Notes
