Ingredients
  

For the Bites
  • 1 cup pancake mix Use your favorite pancake mix.
  • 1 cup water
  • 1 cup cooked sausage, crumbled Pork or turkey sausage can be used.
  • 2 tablespoons maple syrup
  • 1 tablespoon butter For cooking the bites.
Optional Serving
  • to taste additional maple syrup For serving.

Method
 

Preparation
  1. In a mixing bowl, combine the pancake mix and water. Stir until just blended; some lumps are okay, so don’t overmix!
  2. If using uncooked sausage, brown it in a skillet over medium heat until fully cooked. If using pre-cooked sausage, simply crumble it into bite-sized pieces. Set aside.
  3. Place a non-stick skillet over medium heat and add 1 tablespoon of butter. Allow it to melt and coat the pan evenly.
Cooking
  1. Pour a tablespoon of pancake batter into the skillet for each bite. Immediately add a teaspoon of the crumbled sausage on top of the batter. Pour another tablespoon of batter over the sausage to enclose it.
  2. Cook for about 2-3 minutes until bubbles form on the surface, then carefully flip and cook for another 2-3 minutes, or until golden brown.
Serving
  1. Once cooked, serve the bites warm drizzled with maple syrup. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month. Reheat in the microwave for 30 seconds or in a skillet over low heat.
