Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying (use a Halal-friendly oil like vegetable oil)
For the Mashed Potatoes
  • 2 cups mashed potatoes (make from scratch or use instant)
  • 1/2 cup milk
  • 2 tablespoons butter
  • Salt to taste
For the Gravy
  • 2 cups chicken broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water
  • Salt and pepper to taste
For Toppings
  • 1 cup shredded cheese (choose your favorite type)
  • 1 cup canned corn, drained (optional)

Method
 

Prepare the Chicken
  1. In a bowl, mix flour, garlic powder, onion powder, salt, and pepper. Coat the chicken pieces in this mixture.
  2. Heat oil in a pan over medium heat and fry the chicken pieces until golden brown and crisp on all sides, about 5-7 minutes. Remove and drain on paper towels.
Make the Mashed Potatoes
  1. If using fresh potatoes, boil them until fork-tender, then mash with butter, milk, and salt until smooth. Otherwise, prepare according to the instructions if using instant potatoes.
Prepare the Gravy
  1. In a saucepan, bring the chicken broth to a simmer, then add the cornstarch mixture. Stir until the gravy thickens; season with salt and pepper to taste.
Assemble the Bowls
  1. In serving bowls, layer the mashed potatoes, followed by the fried chicken pieces. Drizzle with gravy and sprinkle with cheese. Add corn if you like!

Notes

For a healthier twist, consider baking the chicken instead of frying. You can also use cauliflower mash for a lighter potato alternative. Store assembled bowls in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze separately.
