Cool Cookie Mango Lassi Frozen Bars

Ingredients
  

For the Mango Lassi
  • 1 cup mango puree
  • 1 cup yogurt (plain, unsweetened)
  • 1 cup whipped cream
  • 1/4 cup honey or sugar (to taste)
  • 1/4 teaspoon cardamom (optional, but recommended)
For the Base
  • 1/2 cup cookie crumbs (for the base, any cookie you prefer)
  • 1/4 cup butter (melted, for the base)

Method
 

Preparation of the Base
  1. In a mixing bowl, combine the melted butter with the cookie crumbs until well mixed. The mixture should resemble wet sand.
  2. Press it into an even layer at the bottom of a parchment-lined pan (8x8 inches works great).
Preparation of the Lassi
  1. In a blender, combine mango puree, yogurt, honey or sugar, and cardamom. Blend on high until smooth and creamy.
  2. Taste the mixture and adjust sweetness if desired.
  3. In a separate bowl, gently fold the whipped cream into the mango lassi mixture to keep that light and airy texture.
Assembly and Freezing
  1. Pour the mango lassi mixture over the cookie crust, spreading it out evenly. Tap the pan gently on the counter to remove any air bubbles.
  2. Cover the pan with plastic wrap or aluminum foil and place it in the freezer. Allow it to set for at least 4 hours, or until firm.
Serving
  1. Once fully frozen, remove from the pan and cut into bars. Serve immediately, and enjoy the cool, creamy treat!

Notes

Use fresh mangoes for better flavor, experiment with cookie types for the crust, and adjust sweetness based on mango ripeness. Stir the mixture every hour in the first couple of hours to prevent ice crystals.
