Preparation
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat and set aside.
- In your slow cooker, add the cooked beef at the bottom. Layer in the black beans, kidney beans, sweet corn, and diced tomatoes, followed by the taco seasoning. Mix gently to combine.
- Pour the sour cream over the top and gently fold it into the mixture.
Cooking
- Cover and cook on low for 4-6 hours or high for 2-3 hours.
- About 30 minutes before serving, sprinkle the cheese on top and cover again to let it melt.
Serving
- Once everything is cooked through and the cheese has melted, serve hot topped with chopped green onions.
Notes
Feel free to switch out the ground beef for turkey, add in some diced jalapeƱos for extra heat, and do not skip the cheese for added creaminess. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
