Preparation
- Start by cutting the beef chuck into 1-inch cubes. Dice the potatoes, slice the carrots and onion, and mince the garlic.
Cooking
- Layer the diced potatoes and carrots at the bottom of your crockpot. Follow with the cubed beef, and then add the diced onion and minced garlic on top.
- In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Whisk together until well mixed.
- Pour this mixture over the meat and vegetables in your crockpot, making sure everything is well-coated.
- Cover and set your crockpot on low for 8 hours or high for 4-5 hours. You want that beef to be tender and infused with all those delicious flavors.
Serving
- Once done, give it a good stir and taste for seasoning. Serve your comforting stew hot, garnished with a sprinkle of fresh parsley if desired.
Notes
Leftover stew can be stored in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze it in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
