  • 2 pounds beef chuck, cut into 1-inch cubes Recommended for best flavor and tenderness
  • 4 medium-sized potatoes, diced
  • 4 carrots, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

  • Fresh parsley for garnish

Preparation
  1. Start by cutting the beef chuck into 1-inch cubes. Dice the potatoes, slice the carrots and onion, and mince the garlic.
Cooking
  1. Layer the diced potatoes and carrots at the bottom of your crockpot. Follow with the cubed beef, and then add the diced onion and minced garlic on top.
  2. In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Whisk together until well mixed.
  3. Pour this mixture over the meat and vegetables in your crockpot, making sure everything is well-coated.
  4. Cover and set your crockpot on low for 8 hours or high for 4-5 hours. You want that beef to be tender and infused with all those delicious flavors.
Serving
  1. Once done, give it a good stir and taste for seasoning. Serve your comforting stew hot, garnished with a sprinkle of fresh parsley if desired.

Notes

Leftover stew can be stored in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze it in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
