Preparation
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook for about 3-4 minutes until it becomes translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
Cooking
- Toss in the diced carrots, celery, and zucchini. Sauté for about 5-7 minutes, stirring occasionally, until they begin to soften.
- Add the chopped green beans and the canned diced tomatoes (with their juices). Stir well to combine.
- Pour in the vegetable broth, and add the drained cannellini beans.
- Season with dried basil, dried oregano, salt, and pepper to taste. Bring the mixture to a boil.
- Once boiling, lower the heat and let it simmer for about 10 minutes.
- Add the pasta and continue to cook for another 7-10 minutes or until the pasta is al dente.
- Taste and adjust the seasoning as needed. Allow the soup to rest for a few minutes before serving.
Serving
- Ladle the soup into bowls and sprinkle with fresh parsley.

Notes
Store in an airtight container in the refrigerator for up to 4 days; freeze for up to 3 months. Reheat on the stovetop or in the microwave until warmed through.
