Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a mixing bowl, mash the ripe bananas and stir in the melted butter until combined.
  3. Mix in the sugar, beaten egg, and vanilla extract until well incorporated.
  4. Sprinkle the baking soda and salt over the mixture, and stir to combine.
  5. Gradually add the flour, mixing gently until just incorporated to avoid a dense loaf.
  6. Pour the batter into a lightly greased 4×8 inch loaf pan.
  7. Place in the preheated oven and bake for about 60 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for about 10 minutes, then transfer the bread to a wire rack to cool completely before slicing.

Notes

Choose the riper the bananas, the better! Add nuts or chocolate chips for extra flair. Store wrapped tightly at room temperature for 3-4 days, or freeze for up to 3 months.
