Ingredients

For the Bread
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the Cream Cheese Glaze
  • 1 cup cream cheese (softened)
  • 1 cup powdered sugar
  • 1-2 tablespoons milk (for glaze) Adjust for desired glaze consistency.
For the Cinnamon-Sugar Mixture
  • 1 tablespoon sugar
  • ½ teaspoon cinnamon

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the all-purpose flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk until thoroughly combined.
  3. In a separate bowl, mix the pumpkin puree, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the wet mixture to the dry mixture, stirring gently until just combined.
  5. Grease a loaf pan with vegetable oil or line it with parchment paper.
Baking
  1. Pour half of the batter into the prepared pan, then sprinkle the cinnamon-sugar mixture on top. Pour the remaining batter and sprinkle any leftover cinnamon-sugar mixture on top. Use a knife to swirl the layers together gently.
  2. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  3. While the bread is baking, beat the softened cream cheese until smooth. Gradually mix in the powdered sugar and add milk.
Finishing Touches
  1. Let the bread cool in the pan for about 10 minutes before removing it. Drizzle the cream cheese glaze over the warm bread.
  2. Slice the bread and serve warm.

Notes

Substitutions: Use applesauce instead of pumpkin puree for a similar texture. Timing: Let the bread cool before glazing to avoid melting the glaze. Ensure ingredients are at room temperature for better mixing.
