Method
Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the all-purpose flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk until thoroughly combined.
- In a separate bowl, mix the pumpkin puree, vegetable oil, eggs, and vanilla extract until well combined.
- Gradually add the wet mixture to the dry mixture, stirring gently until just combined.
- Grease a loaf pan with vegetable oil or line it with parchment paper.
Baking
- Pour half of the batter into the prepared pan, then sprinkle the cinnamon-sugar mixture on top. Pour the remaining batter and sprinkle any leftover cinnamon-sugar mixture on top. Use a knife to swirl the layers together gently.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- While the bread is baking, beat the softened cream cheese until smooth. Gradually mix in the powdered sugar and add milk.
Finishing Touches
- Let the bread cool in the pan for about 10 minutes before removing it. Drizzle the cream cheese glaze over the warm bread.
- Slice the bread and serve warm.
Notes
Substitutions: Use applesauce instead of pumpkin puree for a similar texture. Timing: Let the bread cool before glazing to avoid melting the glaze. Ensure ingredients are at room temperature for better mixing.
