Cinnamon Apple Donut Muffins

Ingredients
  

For the Muffins
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder Ensure it's fresh
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk (any kind) Almond, soy, etc.
  • ½ cup melted unsalted butter
  • 1 cup chopped apples Peeled and cored, Granny Smith works best
  • ½ teaspoon vanilla extract
Optional Topping
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your muffin tin or line with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
  3. In another bowl, beat the egg and add the milk, melted butter, and vanilla extract. Mix until well blended.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined; it’s okay if there are a few lumps.
  5. Fold in the chopped apples carefully to avoid breaking them down too much.
  6. Using a spoon or cookie scoop, fill each muffin cup about ¾ full with the batter.
Baking
  1. Place in the preheated oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  2. For optional topping, combine sugar and cinnamon in a small bowl. Once muffins cool slightly, roll each in the cinnamon-sugar topping.
  3. Let the muffins cool in the pan for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or preheated oven for fresh texture.
