Muffin Batter Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup apples, peeled and diced
  • 1 teaspoon vanilla extract
Cinnamon Sugar Topping
  • 1/4 cup granulated sugar For topping
  • 1 tablespoon ground cinnamon For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the melted butter, eggs, milk, and vanilla extract until well blended.
  4. Pour the wet ingredients into the dry ingredients and gently mix just until combined. Don't overmix!
  5. Fold in the diced apples until they are evenly distributed in the batter.
  6. Evenly fill each muffin cup with the batter, about 2/3 full.
  7. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. While the muffins are baking, mix together the sugar and cinnamon for the topping in a small bowl.
  9. Once the muffins are done, let them cool slightly, then coat them in the cinnamon sugar topping while they are still warm.
  10. Enjoy your delicious muffins fresh out of the oven or let them cool completely before storing!

Notes

For a healthier twist, consider swapping in whole wheat flour. Add chopped nuts or raisins for extra texture. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. Reheat in the microwave for a few seconds.
