Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the melted butter, eggs, milk, and vanilla extract until well blended.
- Pour the wet ingredients into the dry ingredients and gently mix just until combined. Don't overmix!
- Fold in the diced apples until they are evenly distributed in the batter.
- Evenly fill each muffin cup with the batter, about 2/3 full.
- Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
- While the muffins are baking, mix together the sugar and cinnamon for the topping in a small bowl.
- Once the muffins are done, let them cool slightly, then coat them in the cinnamon sugar topping while they are still warm.
- Enjoy your delicious muffins fresh out of the oven or let them cool completely before storing!
Notes
For a healthier twist, consider swapping in whole wheat flour. Add chopped nuts or raisins for extra texture. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. Reheat in the microwave for a few seconds.
