Ingredients
  

For the Marinade
  • 1/2 cup lime juice (freshly squeezed) Freshly squeezed is best!
  • 1 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
For the Chicken
  • 4 boneless, skinless chicken breasts

Method
 

Preparation
  1. In a mixing bowl, whisk together the freshly squeezed lime juice, chopped cilantro, minced garlic, cumin, salt, black pepper, and olive oil.
  2. Place the chicken breasts in a large dish or zip-top bag, then pour the marinade over the chicken, ensuring every piece is well-coated. Allow the chicken to marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
  3. If using a grill, preheat it to medium-high heat. Alternatively, heat a skillet over medium heat with a little olive oil.
Cooking
  1. Remove the chicken from the marinade, letting any excess drain off. Grill or sauté the chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
Serving
  1. Once cooked, let the chicken rest for 5 minutes before slicing. Serve warm with your desired sides and enjoy!

Notes

For an extra flavor boost, marinate the chicken for longer. You can grill, bake, or sauté the chicken based on your preference. Avoid overcooking to achieve juicy results.
