Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, baking soda, baking powder, and cream of tartar.
- In another bowl, cream the softened butter and sugar together until light and fluffy, around 3-5 minutes with an electric mixer.
- Add in the egg, vanilla extract, and almond extract, mixing until well combined.
- Gradually blend in the dry ingredients to the butter mixture, being careful not to over-mix.
- Scoop out the dough with a tablespoon and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving some space in between.
Baking
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

For optimal results, ensure softened butter is at room temperature and watch baking time closely to prevent over-baking. Store in an airtight container for up to a week or freeze for up to three months.
