  • 2 cups noodles (such as udon or ramen) Your choice of noodles
  • 1 cup broccoli florets Fresh for better crunch
  • 1 piece bell pepper, sliced Adds color and sweetness
  • 1/4 cup soy sauce For seasoning
  • 2 tablespoons teriyaki sauce For the teriyaki flavor
  • 2 tablespoons honey To add sweetness
  • 1 tablespoon sesame oil Adds rich flavor
  • 1 clove garlic, minced For aroma
  • 1 teaspoon ginger, minced For an extra zing
  • to taste Sesame seeds for garnish Optional garnish
  • to taste Green onions for garnish Optional garnish

Method

Cooking the Noodles
  1. Begin by cooking the noodles according to the package instructions. Once they are cooked, drain them and set aside. A little drizzle of sesame oil can keep them from sticking together.
Preparing the Chicken
  1. In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the sliced chicken and cook until it’s no longer pink and starts to brown, about 5-7 minutes.
Adding the Vegetables
  1. Throw in the minced garlic and ginger, stirring for about 1 minute until fragrant. Then, toss in your broccoli florets and sliced bell peppers, cooking for another 4-5 minutes until they are vibrant and tender but still crisp.
Creating the Sauce
  1. Pour in the soy sauce, teriyaki sauce, and honey. Stir well to coat everything in that amazing glaze and let it simmer for an additional 2-3 minutes.
Combining with Noodles
  1. Add the cooked noodles to the mix and gently toss everything together until the noodles are well coated and heated through.
Serving and Garnishing
  1. Remove the pan from heat, and sprinkle sesame seeds and green onions on top before serving. Enjoy your delightful Chicken Teriyaki Noodles hot!

Notes

For a twist, consider substituting the chicken with tofu or shrimp for a plant-based or seafood variant. Don’t overcook the veggies; they should have that perfect crunch for added texture. If you prefer a spicier kick, add a splash of chili garlic sauce or a sprinkle of red pepper flakes to the sauce mixture. Make sure to prep your ingredients in advance to streamline your cooking process.
