Chicken Preparation
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons taco seasoning
Taco Assembly
  • 8 pieces corn tortillas
  • 1 ripe mango, diced
  • 1/2 cup red onion, finely chopped
  • 1 piece lime, juiced
  • 1/4 cup fresh cilantro, chopped

Method
 

Preparation
  1. Cut the chicken breasts into bite-sized pieces and coat with taco seasoning in a bowl.
Cooking
  1. Heat a splash of oil in a large skillet over medium heat and add the seasoned chicken. Cook for about 6-8 minutes, stirring occasionally, until cooked through and golden brown.
Making the Salsa
  1. In a medium bowl, combine diced mango, chopped red onion, lime juice, and cilantro. Season with salt and pepper to taste. Mix well and set aside.
Warming Tortillas
  1. In another skillet, warm the corn tortillas for about 30 seconds on each side until pliable, or microwave them wrapped in a towel for about 15-20 seconds.
Assembling
  1. To assemble, take a warm tortilla, add a generous portion of the chicken, and top it with a spoonful of mango salsa.
Serving
  1. Serve immediately with lime wedges for added zest.

Notes

For added flavor, consider toppings like diced avocado or extra lime juice. Store leftovers separately; chicken lasts 3-4 days, salsa for 1-2 days.
