Preparation
- Season the chicken breasts with salt and pepper on both sides.
Cooking the Chicken
- In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
Preparing the Sauce and Cooking the Rice
- In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant. Pour in the chicken broth and stir, scraping up any brown bits from the bottom of the skillet.
- Add the rice to the skillet, cover, and reduce the heat to low. Cook according to package instructions, typically about 15-20 minutes.
Final Assembly
- Once the rice is cooked, return the chicken to the skillet. Stir in the grated Parmesan cheese until melted and combined.
- Plate the chicken on a bed of garlic Parmesan rice. Garnish with parsley and serve with lemon wedges for extra zing.
