Chicken Ingredients
  • 2 pieces boneless, skinless chicken breasts Seasoned with salt and pepper
  • 2 tablespoons olive oil For cooking the chicken
  • 4 cloves garlic, minced For the sauce
  • 1 cup chicken broth For the sauce
Rice Ingredients
  • 1 cup rice (uncooked) Any variety of rice can work
  • 1 cup grated Parmesan cheese For mixing with the rice
  • 1 tablespoon fresh parsley, chopped Optional garnish

Preparation
  1. Season the chicken breasts with salt and pepper on both sides.
Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
Preparing the Sauce and Cooking the Rice
  1. In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant. Pour in the chicken broth and stir, scraping up any brown bits from the bottom of the skillet.
  2. Add the rice to the skillet, cover, and reduce the heat to low. Cook according to package instructions, typically about 15-20 minutes.
Final Assembly
  1. Once the rice is cooked, return the chicken to the skillet. Stir in the grated Parmesan cheese until melted and combined.
  2. Plate the chicken on a bed of garlic Parmesan rice. Garnish with parsley and serve with lemon wedges for extra zing.

Notes

Optional: Use pre-cooked chicken to save time or add vegetables like spinach or broccoli for more nutrition. Store leftovers in an airtight container for up to 3 days.
