Method
 

Cooking Pasta
  1. Begin by boiling salted water in a large pot. Add your pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the rest and set aside.
Sautéing Chicken
  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the diced chicken, seasoning it with salt and pepper. Sauté for about 5-7 minutes or until the chicken is fully cooked and golden brown. Remove chicken from skillet and set aside.
Preparing Sauce
  1. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to let it burn! Then, add the chicken broth, lemon juice, and lemon zest. Scrape the bottom of the pan to pick up any flavorful bits. Let it simmer for a couple of minutes.
Combining Ingredients
  1. Return the chicken to the skillet, adding the cooked pasta and tossing it in the sauce. If the pasta seems dry, add a splash of the reserved pasta water to achieve your desired consistency.
Finishing Touches
  1. Stir in the grated Parmesan cheese until melted and well-combined. Taste for seasoning and adjust with more salt, pepper, or additional lemon juice if desired.
