Preparation
- Flatten the chicken breasts to an even thickness, around 1/2 inch thick.
- In a medium bowl, combine the bread crumbs, Parmesan cheese, garlic powder, salt, and black pepper. Mix well.
- Dip each chicken breast into the breadcrumb mixture, ensuring it’s fully coated. Press down gently to make sure the crumbs stick.
Cooking
- In a large skillet, heat enough olive oil over medium heat to cover the bottom of the pan.
- Once the oil is hot, add the breaded chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through.
- Place the cooked chicken in a baking dish, pour marinara sauce over each piece, and sprinkle mozzarella cheese on top.
- Preheat your oven's broiler and place the dish in for about 3-5 minutes until the cheese is bubbling and melted.
Assembly
- Cut your sandwich rolls and place a chicken piece in each. Serve hot and enjoy!

For healthier options, try using baking spray instead of frying oil, or bake the breaded chicken in the oven for a less greasy alternative. Always check the internal temperature of the chicken; it should reach 165°F (75°C) to ensure it’s fully cooked.
