Ingredients
  

For the Chicken
  • 2 pieces boneless chicken breasts Pounded to an even thickness
  • 1 cup bread crumbs Regular or whole wheat
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Sandwich Assembly
  • 1 cup marinara sauce For topping the chicken
  • 1 cup shredded mozzarella cheese For topping the chicken
  • 4 pieces sandwich rolls For serving

Method
 

Preparation
  1. Flatten the chicken breasts to an even thickness, around 1/2 inch thick.
  2. In a medium bowl, combine the bread crumbs, Parmesan cheese, garlic powder, salt, and black pepper. Mix well.
  3. Dip each chicken breast into the breadcrumb mixture, ensuring it’s fully coated. Press down gently to make sure the crumbs stick.
Cooking
  1. In a large skillet, heat enough olive oil over medium heat to cover the bottom of the pan.
  2. Once the oil is hot, add the breaded chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through.
  3. Place the cooked chicken in a baking dish, pour marinara sauce over each piece, and sprinkle mozzarella cheese on top.
  4. Preheat your oven's broiler and place the dish in for about 3-5 minutes until the cheese is bubbling and melted.
Assembly
  1. Cut your sandwich rolls and place a chicken piece in each. Serve hot and enjoy!

Notes

For healthier options, try using baking spray instead of frying oil, or bake the breaded chicken in the oven for a less greasy alternative. Always check the internal temperature of the chicken; it should reach 165°F (75°C) to ensure it’s fully cooked.
