Preparation
- Preheat your oven to 400°F (200°C).
- Pound the chicken breasts to an even thickness (about 1 inch).
- Season each breast with salt and pepper.
Coating
- Beat the eggs in one bowl and combine breadcrumbs and grated Parmesan cheese in another.
- Dip each chicken breast into the egg mixture, allowing excess to drip off.

Cooking
- Heat about 1/2 inch of olive oil in a large skillet over medium heat.
- Fry the chicken breasts two at a time for about 3-4 minutes on each side, or until golden brown.
- Remove and place on a paper towel to drain excess oil.
Assembling
- In a greased baking dish, layer the fried chicken breasts.
- Spoon marinara sauce generously over each breast and sprinkle with shredded mozzarella cheese.
Baking
- Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is bubbly and golden.
Serving
- Remove from the oven, let cool for a couple of minutes, garnish with fresh basil, and serve hot.
