Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 eggs eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • Salt and pepper Salt and pepper to taste
  • Olive oil Olive oil for frying
  • Fresh basil Fresh basil for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken breasts to an even thickness (about 1 inch).
  3. Season each breast with salt and pepper.
Coating
  1. Beat the eggs in one bowl and combine breadcrumbs and grated Parmesan cheese in another.
  2. Dip each chicken breast into the egg mixture, allowing excess to drip off.
  3. Coat in the breadcrumb-Parmesan mixture, pressing gently to ensure it sticks.
Cooking
  1. Heat about 1/2 inch of olive oil in a large skillet over medium heat.
  2. Fry the chicken breasts two at a time for about 3-4 minutes on each side, or until golden brown.
  3. Remove and place on a paper towel to drain excess oil.
Assembling
  1. In a greased baking dish, layer the fried chicken breasts.
  2. Spoon marinara sauce generously over each breast and sprinkle with shredded mozzarella cheese.
Baking
  1. Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is bubbly and golden.
Serving
  1. Remove from the oven, let cool for a couple of minutes, garnish with fresh basil, and serve hot.

Notes

Got leftovers? Store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze cooked chicken for up to 2 months. Reheat in the oven at 350°F (175°C) for 20-25 minutes or microwave for a quick fix.
