Ingredients
  

For the Mashed Potatoes
  • 4 medium Medium-sized potatoes, peeled and quartered
  • 4 tablespoons Butter For richer flavor
  • ½ cup Milk (or dairy-free alternative) Adjust for desired creaminess
  • Salt and Pepper to taste For seasoning
For the Chicken and Gravy
  • 1 lb Chicken Breast, cubed Tender and juicy
  • 1 cup Chicken Broth For making gravy
  • 1 packet Halal-friendly gravy mix Follow package instructions
  • 2 tablespoons Olive Oil For cooking chicken
  • 1 cup Frozen mixed vegetables (peas, carrots, corn) Add mix for color and nutrition

Method
 

Preparation of Mashed Potatoes
  1. Boil the peeled and quartered potatoes in salted water until tender, about 15-20 minutes.
  2. Once cooked, drain the water and return potatoes to the pot. Add butter and milk.
  3. Mash to your desired consistency and season with salt and pepper. Set aside.
Cooking the Chicken
  1. In a skillet, heat olive oil over medium heat. Add cubed chicken and season with salt and pepper.
  2. Cook the chicken for about 6-8 minutes, or until golden brown and cooked through.
  3. If using frozen veggies, add them in for the last 2-3 minutes of cooking, allowing them to thaw and cook.
Preparing the Gravy
  1. In a separate saucepan, prepare the gravy according to package instructions using chicken broth for added flavor. Stir until smooth and thickened.
Assembling the Bowls
  1. Start with a generous serving of mashed potatoes at the bottom of your bowls.
  2. Top with the cooked chicken and veggies.
  3. Finally, drizzle the warm gravy over the top, and you’re all set!

Notes

For vegetarian option, substitute chicken with grilled portobello mushrooms. Ensure potatoes are well-cooked to avoid a lumpy texture. Always taste as you go for proper seasoning.
