Preparation of Mashed Potatoes
- Boil the peeled and quartered potatoes in salted water until tender, about 15-20 minutes.
- Once cooked, drain the water and return potatoes to the pot. Add butter and milk.
- Mash to your desired consistency and season with salt and pepper. Set aside.
Cooking the Chicken
- In a skillet, heat olive oil over medium heat. Add cubed chicken and season with salt and pepper.
- Cook the chicken for about 6-8 minutes, or until golden brown and cooked through.
- If using frozen veggies, add them in for the last 2-3 minutes of cooking, allowing them to thaw and cook.
Preparing the Gravy
- In a separate saucepan, prepare the gravy according to package instructions using chicken broth for added flavor. Stir until smooth and thickened.
Assembling the Bowls
- Start with a generous serving of mashed potatoes at the bottom of your bowls.
- Top with the cooked chicken and veggies.
- Finally, drizzle the warm gravy over the top, and you’re all set!
Notes
For vegetarian option, substitute chicken with grilled portobello mushrooms. Ensure potatoes are well-cooked to avoid a lumpy texture. Always taste as you go for proper seasoning.
