  • 1 lb chicken breast, diced
  • 4 slices Halal bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb gnocchi
  • 2 cups spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving

Method
 

Preparation
  1. Gather all your ingredients. Dice the chicken breast and chop the Halal bacon, onion, and garlic.
Cooking
  1. In a large pot over medium heat, add the chopped Halal bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and set aside, keeping the grease in the pot.
  2. Add the diced onion and minced garlic to the bacon grease. Sauté for about 3-4 minutes until the onions are translucent.
  3. Add the diced chicken, season with salt and pepper, and cook until no longer pink, about 6-8 minutes.
  4. Pour in the chicken broth and bring to a boil. Then reduce heat and stir in the heavy cream.
  5. Add the gnocchi and cook for about 3-4 minutes until they float to the top.
  6. Stir in the spinach and reserved bacon, mixing until the spinach wilts.
  7. Ladle the soup into bowls and sprinkle with Parmesan cheese before serving.

Notes

For a lighter version, use low-fat cream or a plant-based alternative. You can substitute chicken with Halal-certified turkey. Avoid overcooking the gnocchi to maintain the right texture.
