Preparation
- Gather all your ingredients. Dice the chicken breast and chop the Halal bacon, onion, and garlic.
Cooking
- In a large pot over medium heat, add the chopped Halal bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and set aside, keeping the grease in the pot.
- Add the diced onion and minced garlic to the bacon grease. Sauté for about 3-4 minutes until the onions are translucent.
- Add the diced chicken, season with salt and pepper, and cook until no longer pink, about 6-8 minutes.
- Pour in the chicken broth and bring to a boil. Then reduce heat and stir in the heavy cream.
- Add the gnocchi and cook for about 3-4 minutes until they float to the top.
- Stir in the spinach and reserved bacon, mixing until the spinach wilts.
- Ladle the soup into bowls and sprinkle with Parmesan cheese before serving.
Notes
For a lighter version, use low-fat cream or a plant-based alternative. You can substitute chicken with Halal-certified turkey. Avoid overcooking the gnocchi to maintain the right texture.
