  • 4 pieces Bone-in, skin-on chicken thighs or breasts
  • 4 medium Potatoes, diced
  • 3 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 2 teaspoons Fresh rosemary (or 1 teaspoon dried)
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken pieces dry with a paper towel and season generously with salt and pepper.
  3. In a bowl, combine olive oil, minced garlic, and rosemary. Toss the chicken in this mixture until fully coated.
  4. In another bowl, toss the diced potatoes with the remaining olive oil, salt, and pepper, ensuring they are evenly coated.
Cooking
  1. Place the chicken pieces in the center of a baking dish and arrange the potatoes around it in a single layer.
  2. Put the dish in your preheated oven and roast for about 45 minutes to 1 hour, or until the chicken is golden and cooked through, and the potatoes are fork-tender.
  3. Once done, let it rest for about 10 minutes before serving hot with your favorite vegetables on the side.
