- Prepare your ingredients: Start by dicing the onion, carrots, and celery, and mincing the garlic.
Cooking
- In a large pot, heat about 1 tablespoon of olive oil over medium heat. Add the chicken to the pot and season with salt and pepper. Cook for about 5-7 minutes until lightly browned on all sides.
- Once the chicken is cooked through, remove it from the pot and set it aside. In the same pot, add the diced onion, carrots, celery, and minced garlic. Sauté for 5-7 minutes until the onions are translucent and fragrant.
- Return the cooked chicken to the pot. Add in the chicken broth, pearl couscous, and thyme. Bring to a boil.
- Lower the heat and let the soup simmer for about 15-20 minutes or until the couscous is tender and the flavors have melded beautifully.
- Taste your soup and adjust the seasonings if necessary. Serve hot, and enjoy the comforting flavors!

For richer broth, simmer longer. Ensure chicken is cooked thoroughly; soak up broth while storing leftovers; add liquid when reheating.
