  • 1 lb chicken (boneless and skinless)
  • 1 cup pearl couscous
  • 4 cups chicken broth
Vegetables
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 2 cloves garlic (minced)
Seasoning
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking

  1. Prepare your ingredients: Start by dicing the onion, carrots, and celery, and mincing the garlic.
Cooking
  1. In a large pot, heat about 1 tablespoon of olive oil over medium heat. Add the chicken to the pot and season with salt and pepper. Cook for about 5-7 minutes until lightly browned on all sides.
  2. Once the chicken is cooked through, remove it from the pot and set it aside. In the same pot, add the diced onion, carrots, celery, and minced garlic. Sauté for 5-7 minutes until the onions are translucent and fragrant.
  3. Return the cooked chicken to the pot. Add in the chicken broth, pearl couscous, and thyme. Bring to a boil.
  4. Lower the heat and let the soup simmer for about 15-20 minutes or until the couscous is tender and the flavors have melded beautifully.
  5. Taste your soup and adjust the seasonings if necessary. Serve hot, and enjoy the comforting flavors!

Notes

For richer broth, simmer longer. Ensure chicken is cooked thoroughly; soak up broth while storing leftovers; add liquid when reheating.
