Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, almond flour, brown sugar, cinnamon, and salt. Stir until evenly blended.
- In a separate bowl, whisk together the applesauce, honey or maple syrup, and vanilla extract. Pour this mixture into the dry ingredients.
- Gently fold in the diced apples until well incorporated.
- Line an 8×8-inch baking dish with parchment paper. Spread the mixture evenly and press down firmly.
Baking
- Place in the preheated oven and bake for about 25 minutes, or until the edges begin to turn golden brown.
Cooling and Serving
- Allow the bars to cool in the dish for about 10 minutes, then lift them out using the parchment paper. Let cool completely on a wire rack before cutting them into squares or bars.
Notes
For storage, let cool completely, then cut into squares. Store in an airtight container in the refrigerator for up to a week. Freeze wrapped individually for longer storage. Microwave for 15-20 seconds to reheat.
