Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 cup almond flour Can substitute with coconut flour, adjust moisture.
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 cup diced apples Fresh or dried apples can be used.
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, almond flour, brown sugar, cinnamon, and salt. Stir until evenly blended.
  3. In a separate bowl, whisk together the applesauce, honey or maple syrup, and vanilla extract. Pour this mixture into the dry ingredients.
  4. Gently fold in the diced apples until well incorporated.
  5. Line an 8×8-inch baking dish with parchment paper. Spread the mixture evenly and press down firmly.
Baking
  1. Place in the preheated oven and bake for about 25 minutes, or until the edges begin to turn golden brown.
Cooling and Serving
  1. Allow the bars to cool in the dish for about 10 minutes, then lift them out using the parchment paper. Let cool completely on a wire rack before cutting them into squares or bars.

Notes

For storage, let cool completely, then cut into squares. Store in an airtight container in the refrigerator for up to a week. Freeze wrapped individually for longer storage. Microwave for 15-20 seconds to reheat.
