  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Method
 

Cooking Gnocchi
  1. Boil a large pot of salted water. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes or until they rise to the surface. Once done, drain and set aside.
Sautéing Tomatoes and Garlic
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the halved cherry tomatoes, seasoning with salt and pepper. Cook for 5-7 minutes, stirring occasionally until the tomatoes soften.
Combining Ingredients
  1. Once the tomatoes have cooked down, add the cooked gnocchi to the skillet, gently tossing to combine. Sprinkle the shredded cheese evenly over the mixture. Cover the skillet and let it cook for 3-5 minutes until the cheese melts beautifully.
Serving
  1. Remove from heat and garnish with fresh basil. Transfer to a serving dish and enjoy!

Notes

For added depth, consider using a mix of cheeses or tossing in some cooked vegetables like spinach or bell peppers. Make sure to not overcook the tomatoes to maintain their vibrant flavor. Store leftovers in an airtight container for up to 3 days. Reheat in a skillet over low heat for best results.
