Ingredients
  

Main Ingredients
  • 8 ounces pasta (rotini or penne)
  • 1 pound ground beef or turkey Can substitute with ground chicken or plant-based meat for lighter option.
  • 1 packet taco seasoning
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup corn (optional) This can be omitted if preferred.
  • Chopped green onions for garnish (optional)

Method
 

Cooking the Pasta
  1. In a large skillet over medium heat, bring water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and set aside.
Browning the Meat
  1. In the same skillet, add the ground beef or turkey. Cook until browned and fully cooked through, about 5–7 minutes. Make sure to break the meat apart with a spatula.
Seasoning and Combining
  1. Once the meat is cooked, drain any excess fat. Sprinkle the taco seasoning over the meat, mixing well to coat. Stir in the diced tomatoes (with the juices) and one cup of water. Bring to a simmer.
  2. Once the meat mixture starts bubbling, add the cooked pasta and corn (if using). Stir well to combine all the flavors.
Creating Cheesy Goodness
  1. Reduce the heat to low, stir in the shredded cheddar cheese, and continue to stir until the cheese has melted and the mixture is creamy.
Garnishing and Serving
  1. Remove from heat and top with chopped green onions if desired. Serve warm and enjoy!

Notes

For best results, prep your ingredients in advance. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
