Main ingredients
  • 2 pounds baby potatoes (washed and halved) Look for firm potatoes without blemishes.
  • 1 packet ranch seasoning mix
  • 3 tablespoons olive oil
  • 1 cup shredded cheddar cheese Use more for extra cheesiness!
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped fresh parsley (for garnish) Add after roasting.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved baby potatoes with olive oil, ranch seasoning, garlic powder, salt, and pepper. Toss well to ensure every potato is coated.
  3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Bake for about 25-30 minutes, or until the potatoes are tender and golden brown, tossing them halfway through for even browning.
  2. Once the potatoes are roasted, remove them from the oven and sprinkle the shredded cheddar cheese on top. Return them to the oven for an additional 5 minutes until the cheese is melted and bubbly.
Serving
  1. Remove from the oven, sprinkle with freshly chopped parsley, and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for 10-15 minutes at 350°F (175°C) or in the microwave.
