Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the halved baby potatoes with olive oil, ranch seasoning, garlic powder, salt, and pepper. Toss well to ensure every potato is coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
Cooking
- Bake for about 25-30 minutes, or until the potatoes are tender and golden brown, tossing them halfway through for even browning.
- Once the potatoes are roasted, remove them from the oven and sprinkle the shredded cheddar cheese on top. Return them to the oven for an additional 5 minutes until the cheese is melted and bubbly.
Serving
- Remove from the oven, sprinkle with freshly chopped parsley, and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for 10-15 minutes at 350°F (175°C) or in the microwave.
