  1. Preheat your oven to 375°F (190°C). Season both sides of the chicken breasts with salt and pepper.
Cooking
  1. In an oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 3-4 minutes on each side until they turn golden brown.
  2. Reduce the heat to medium and drizzle the honey mustard over the chicken, ensuring each piece is coated.
  3. Sprinkle your choice of shredded cheese evenly over the chicken.
  4. Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F or 74°C).
