  • 1 lb ground beef use lean ground beef for less fat
  • 1 cup uncooked rice (white or brown)
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese more cheese can be added to taste
  • 1 can cream of mushroom soup (or cream of chicken)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional) adds freshness to the dish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) while you gather all your ingredients.
  2. In a large skillet over medium heat, sauté the chopped onion and minced garlic until translucent. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain any excess fat.
  3. In a large mixing bowl, combine the cooked beef mixture, uncooked rice, beef broth, cream of mushroom soup, salt, and pepper. Stir until everything is well combined.
  4. Pour the mixture into a greased 9×13-inch baking dish and spread it evenly.
  5. Sprinkle the shredded cheddar cheese on top of the mixture.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for another 10 minutes until the cheese is bubbly and slightly golden.
  7. Once done, let it cool for a few minutes, garnish with fresh parsley if desired, and serve hot.

Notes

Feel free to swap ground beef for ground turkey or chicken for a lighter option. If using brown rice, adjust the cooking time as needed. Store leftovers in an airtight container and enjoy within 3-4 days.
