  1. Cut off the root ends of the leeks and dark green tops, leaving the tender white part and some light green. Slice the leeks in half lengthwise and rinse thoroughly under cold water to remove any grit. Slice them into ½-inch pieces.
Cooking
  1. In a large skillet, melt the butter over medium heat. Once melted, add the sliced leeks. Cook for about 10-15 minutes, stirring occasionally, until they are soft and translucent.
  2. Pour in the heavy cream and bring to a gentle simmer. Season with salt and pepper. Allow to simmer for about 5-7 minutes until the mixture slightly thickens.
  3. Stir in the shredded cheese until it melts completely, creating a creamy texture. Adjust the seasoning as needed.
