  • 2 cups cooked chicken, shredded or diced Feel free to use rotisserie chicken for extra flavor and ease.
  • 2 cups broccoli florets, steamed until tender Make sure broccoli is slightly undercooked to avoid mushiness.
  • 1 cup cheddar cheese, shredded You can blend with other cheeses like mozzarella or pepper jack for a twist.
  • 1 cup cream of chicken soup
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Don’t skip seasoning for better flavor.
  • 1 cup cooked bacon, crumbled Turkey bacon can be used for a healthier option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9x13 inch baking dish with cooking spray.
  3. In a large mixing bowl, combine shredded chicken, steamed broccoli, ½ cup of cheddar cheese, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well coated.
  4. Pour the mixture into the prepared casserole dish, spreading it evenly.
  5. Sprinkle the remaining ½ cup of cheddar cheese and crumbled bacon over the top.
Baking
  1. Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let it cool for a few minutes before serving.

Notes

Serve with side salad, garlic bread or dinner rolls. For drinks, iced tea or lemonade pairs well.
