Preparation
- Steam the cauliflower florets until tender, about 10-15 minutes. Alternatively, you can microwave them in a covered dish with a little water.
- Mash the steamed cauliflower in a bowl with a fork or potato masher. Mix in the shredded cheese and season with salt and pepper until well combined.
Cooking
- Heat a non-stick skillet over medium heat and melt one tablespoon of butter.
- Take two slices of bread, spread a layer of the cauliflower-cheese mixture on one side, and top with the remaining slices of bread.
- Place the sandwich in the skillet and grill until golden brown, about 3-4 minutes per side. Add extra butter for the second side if needed.
- Once both sides are crispy and the cheese is melted, remove from the skillet and slice in half.
- Serve immediately and enjoy your Cheesy Cauliflower Grilled Cheese!
Notes
For added flavor, try using pepper jack cheese or mixing in chopped spinach into the cauliflower filling. If storing leftovers, keep them in an airtight container for up to 3 days and reheat in a skillet or oven.
