  4. In a large bowl, drizzle the potato slices with olive oil. Add garlic powder, salt, and pepper. Toss until well-coated.
  5. Line a baking sheet with parchment paper and arrange the potato slices in a single layer, ensuring they do not overlap.
Baking
  1. Bake the potato slices in the preheated oven for about 20 minutes, or until the edges are golden brown.
  2. Remove from oven and sprinkle shredded cheese over the potato slices.
  3. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  4. Take out of the oven and garnish with chopped parsley if desired. Serve hot.

Consider using a dairy-free cheese alternative. Soak potato slices in cold water before seasoning for extra crispiness. Store leftovers in an airtight container for up to 3 days, or freeze before baking.
