Preparation
- Preheat your oven to 425°F (220°C) to ensure even cooking.
- Wash and scrub the potatoes thoroughly. Optionally peel them for a different texture.
- Slice the potatoes into thin rounds, approximately 1/4 inch thick.
- In a large bowl, drizzle the potato slices with olive oil. Add garlic powder, salt, and pepper. Toss until well-coated.
- Line a baking sheet with parchment paper and arrange the potato slices in a single layer, ensuring they do not overlap.
Baking
- Bake the potato slices in the preheated oven for about 20 minutes, or until the edges are golden brown.
- Remove from oven and sprinkle shredded cheese over the potato slices.
- Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
- Take out of the oven and garnish with chopped parsley if desired. Serve hot.
Notes
Consider using a dairy-free cheese alternative. Soak potato slices in cold water before seasoning for extra crispiness. Store leftovers in an airtight container for up to 3 days, or freeze before baking.
