Preparation
- Preheat your oven to 400°F (200°C).
- Wash and slice the potatoes: Scrub the potatoes thoroughly under running water. No need to peel them! Slice them into even, thin rounds (about 1/4 inch thick).
- In a large mixing bowl, combine the potato slices with olive oil, garlic powder, salt, and pepper. Toss them until they are evenly coated.
- Spread the seasoned potato slices on a baking sheet in a single layer.
Baking
- Pop them into the preheated oven and bake for about 20-25 minutes, or until they start to turn golden brown.
- Once golden, take them out, sprinkle shredded cheese generously over the top of the slices, and return to the oven.
- Bake for an additional 5-10 minutes until the cheese is fully melted and bubbly.
- Remove from the oven and garnish with chopped chives or green onions before serving.
Notes
Choose the Right Potatoes: Opt for russet for the best texture. Don’t overcrowd the baking sheet to ensure crispiness. Timing is key, keep an eye on the potatoes while they bake. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
