  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
  3. In another bowl, stir together the vegetable oil, eggs, vanilla extract, and grated carrots until mixed thoroughly.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. If you’re adding nuts, fold them in gently.
  5. Pour the batter into the prepared pan, spreading it evenly. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the bars cool completely in the pan on a wire rack before frosting with cream cheese frosting.
  7. Slice into bars and enjoy with family and friends!

Notes

For a healthier version, consider swapping half the all-purpose flour with whole wheat flour. Greek yogurt can be used in place of part of the oil for a low-fat option. Ensure you’re using fresh spices for the best flavor.
