- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
- In another bowl, stir together the vegetable oil, eggs, vanilla extract, and grated carrots until mixed thoroughly.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined. If you’re adding nuts, fold them in gently.
- Pour the batter into the prepared pan, spreading it evenly. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bars cool completely in the pan on a wire rack before frosting with cream cheese frosting.
- Slice into bars and enjoy with family and friends!
Notes
For a healthier version, consider swapping half the all-purpose flour with whole wheat flour. Greek yogurt can be used in place of part of the oil for a low-fat option. Ensure you’re using fresh spices for the best flavor.
