  • 2 cups canned white beans, drained and rinsed
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped or 1 teaspoon dried rosemary
  • 2 tablespoons balsamic vinegar make sure it’s halal compliant
  • Salt and pepper to taste

  1. Start by thinly slicing your onions. The thinner, the better, as this will help them caramelize evenly.
  2. In a large skillet or saucepan, heat 2 tablespoons of olive oil over medium heat.
  3. Add the sliced onions to the pan, season with a pinch of salt, and cook, stirring frequently, for about 15 minutes until golden brown and syrupy. Add a splash of water to deglaze if they start to stick.
  4. Once the onions are caramelized to perfection, add the white beans and chopped rosemary. Stir gently to combine.
  5. Drizzle the balsamic vinegar over the mixture. Season with pepper to taste and stir everything together. Allow it to cook for an additional 5 minutes.
  6. Remove from heat, and serve warm. Top with your choice of spices or herbs for extra flair!

Notes

For onion variations, try using red onions for a different flavor. This dish is perfect for leftovers, storing in an airtight container for up to 3 days in the fridge, or freezing for up to 1 month. Reheat on the stovetop or in the microwave.
