- Slice the onions thinly. The thinner they are, the quicker they will caramelize.
Caramelization
- In a large saucepan, heat the olive oil over medium heat and add the onions with a pinch of salt. Sauté for about 15-20 minutes until golden brown.
Combining
- Stir in the cooked white beans gently to avoid mashing them.
- Pour in the balsamic vinegar and toss in the chopped rosemary. Stir gently to coat the beans.
Final Cooking
- Continue to cook for another 5 minutes, allowing flavors to meld and the balsamic to thicken.
Serving
- Transfer to a serving dish, top with additional rosemary if desired, and enjoy warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat gently, adding water or broth if necessary.
