Ingredients

Main Ingredients
  • 1 can white beans (such as cannellini or navy beans), drained and rinsed
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste

Method

Caramelizing the Onions
  1. Begin by heating olive oil in a large skillet over medium heat. Add the sliced onions and stir for a minute or two.
  2. Reduce the heat to low and let them cook gently, stirring occasionally, for about 15-20 minutes until they are golden-brown.
Incorporating the Beans
  1. Once your onions are perfectly caramelized, add the drained white beans. Stir well to combine and allow the beans to warm through and absorb the flavor.
Adding Flavor Enhancements
  1. Pour in the balsamic vinegar and fresh rosemary, mixing thoroughly. Season with salt and pepper to taste. Let everything cook together for another 5 minutes, allowing the flavors to meld.
Serve and Enjoy
  1. Transfer the dish to a serving bowl or plate. Optionally, garnish with some more rosemary and a drizzle of olive oil.

Notes

Substitutions: Any variety of white beans can be used. Soaking dry beans overnight can enhance the flavor. Timing: Do not rush the caramelization for the best sweet onion flavor. Storing: Refrigerate in an airtight container for up to 4 days or freeze for longer storage. Reheat in skillet over low heat, adding water or olive oil if necessary.
