Preparation
- Preheat your oven to 425°F (220°C).
- Wash and halve the baby potatoes.
Mixing and Coating
- In a small bowl, mix the melted butter, minced garlic, chopped parsley, salt, and pepper until well combined.
- In a large mixing bowl, pour the butter-garlic mixture over the halved potatoes and toss until they are evenly coated.
Roasting
- Spread the coated potatoes out in a single layer on a baking sheet lined with parchment paper.
- Place the baking sheet in the preheated oven and roast the potatoes for about 25-30 minutes, tossing them halfway through for even browning.
Serving
- Once roasted, remove the potatoes from the oven and sprinkle with additional herbs or grated Parmesan cheese if desired. Serve hot.
Notes
For extra crunchiness, broil the potatoes for 1-2 minutes at the end of cooking. If you have leftovers, store them in an airtight container in the fridge for 3-5 days.
