  • 2 pounds baby potatoes, halved You can use any variety of baby potatoes.
  • 4 tablespoons unsalted butter, melted For a richer flavor, use high-quality butter.
  • 4 cloves garlic, minced Adjust the quantity based on your garlic preference.
  • 1 tablespoon fresh parsley, chopped You may substitute with any herb of your choice.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • to taste Grated Parmesan cheese for garnishing Optional but recommended.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
Mixing and Coating
  1. In a small bowl, mix the melted butter, minced garlic, chopped parsley, salt, and pepper until well combined.
  2. In a large mixing bowl, pour the butter-garlic mixture over the halved potatoes and toss until they are evenly coated.
Roasting
  1. Spread the coated potatoes out in a single layer on a baking sheet lined with parchment paper.
  2. Place the baking sheet in the preheated oven and roast the potatoes for about 25-30 minutes, tossing them halfway through for even browning.
Serving
  1. Once roasted, remove the potatoes from the oven and sprinkle with additional herbs or grated Parmesan cheese if desired. Serve hot.

Notes

For extra crunchiness, broil the potatoes for 1-2 minutes at the end of cooking. If you have leftovers, store them in an airtight container in the fridge for 3-5 days.
