Ingredients
  

For the Crust
  • 1.5 cups gra cracker cbs
  • 0.5 cups unsalted butter, melted
  • 2 tablespoons sugar
For the Cheesecake Filling
  • 24 oz cream cheese, softened Make sure it's at room temperature.
  • 1 cup brown sugar
  • 3 large eggs At room temperature.
  • 1 teaspoon vanilla extract
  • 0.33 cups heavy cream
For the Butterscotch Sauce
  • 0.5 cups butterscotch chips
  • 0.25 cups heavy cream
  • 1 pinch salt To enhance flavor.

Method
 

Preparation of Crust
  1. Preheat your oven to 325°F (163°C).
  2. Combine gra cracker cbs, melted butter, and sugar in a mixing bowl until fully mixed.
  3. Press the mixture into the bottom of a springform pan to create a firm crust.
  4. Bake for about 10 minutes until slightly golden, then let it cool.
Making the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese and brown sugar until smooth.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract and heavy cream until fully combined.
Baking the Cheesecake
  1. Pour the cheesecake filling over the cooled crust and smooth the top.
  2. Bake in the preheated oven for about 50-60 minutes or until the edges are set and the center is slightly jiggly.
  3. Turn off the oven and let the cheesecake sit for an hour with the oven door ajar.
Chilling the Cheesecake
  1. Remove the cheesecake from the oven and let it cool to room temperature.
  2. Refrigerate for at least 4 hours, or overnight for best results.
Preparing Butterscotch Sauce
  1. In a small saucepan over low heat, combine butterscotch chips and heavy cream.
  2. Stir until the chips are melted and the sauce is smooth.
  3. Add a pinch of salt to enhance the flavor.
Serving
  1. Once the cheesecake is chilled, carefully remove it from the springform pan.
  2. Drizzle the warm butterscotch sauce on top before slicing and serving.
