For the Stuffing
  • 1 cup broccoli florets, steamed and chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt to taste salt
  • Pepper to taste pepper
For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • Olive oil for cooking olive oil

Preparation
  1. In a mixing bowl, combine the steamed broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until thoroughly blended.
  2. Preheat the oven to 375°F (190°C). Carefully slice a pocket into each chicken breast, making sure not to cut all the way through.
Cooking
  1. Generously fill each chicken pocket with the broccoli cheese mixture. You can use toothpicks to secure the openings if needed.
  2. In a large, oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Sear the stuffed chicken for about 4 minutes on each side until golden brown.
  3. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  4. Remove the chicken from the oven, let it rest for a few minutes, and then serve with your favorite sides.

Notes
