Preparation
- Preheat your oven to 400°F (200°C).
- Roll out the thawed puff pastry on a lightly floured surface and cut into squares or rectangles.
- In a bowl, combine blueberries, sugar, cornstarch, and vanilla extract. Toss gently until coated.
Assembly and Baking
- Place about 2 tablespoons of the blueberry filling in the center of each pastry square.
- Fold the corners over to create a pocket or keep the shape flat. Brush the edges with egg wash.
- Arrange on a parchment-lined baking sheet and bake for 25-30 minutes or until golden brown.
Making the Glaze
- While tarts are baking, whisk together powdered sugar, lemon juice, and lemon zest in a bowl until smooth.
- Once tarts are out of the oven, let cool slightly before drizzling the lemon glaze over them.
