  • 1 package puff pastry (thawed)
  • 2 cups fresh blueberries Use quality fresh blueberries for best flavor.
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 medium egg (for egg wash) Beat before applying.
Lemon Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice Freshly squeezed is best.
  • 1 teaspoon lemon zest Add zest for enhanced flavor.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a lightly floured surface and cut into squares or rectangles.
  3. In a bowl, combine blueberries, sugar, cornstarch, and vanilla extract. Toss gently until coated.
Assembly and Baking
  1. Place about 2 tablespoons of the blueberry filling in the center of each pastry square.
  2. Fold the corners over to create a pocket or keep the shape flat. Brush the edges with egg wash.
  3. Arrange on a parchment-lined baking sheet and bake for 25-30 minutes or until golden brown.
Making the Glaze
  1. While tarts are baking, whisk together powdered sugar, lemon juice, and lemon zest in a bowl until smooth.
  2. Once tarts are out of the oven, let cool slightly before drizzling the lemon glaze over them.

Notes

For best results, use fresh ingredients and monitor baking close to the end time. You can experiment with other berries if desired.
