  • 2 cups all-purpose flour Ensure Halal-approved
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk You can use a Halal-friendly alternative
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries Do not thaw frozen blueberries
For the Crunchy Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well to ensure all dry ingredients are evenly distributed.
  3. In another bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract until blended smoothly.
  4. Pour the wet mixture into the dry ingredient bowl. Gently fold them together until just combined (do not overmix).
  5. Carefully fold in the blueberries, ensuring they are evenly distributed without breaking them.
  6. In a separate bowl, combine flour, brown sugar, softened butter, and cinnamon for the streusel topping. Mix with a fork or your fingers until it resembles coarse crumbs.
  7. Spoon the muffin batter into each prepared muffin cup and sprinkle the streusel topping generously over each one.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  2. Once baked, allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use fresh blueberries for the best flavor. Don't overmix the batter to ensure light and fluffy muffins. You can substitute some all-purpose flour with whole wheat flour for extra nutrition. For serving, enjoy warm and store in an airtight container.
