Ingredients
  

For the Chicken
  • 4 pieces Chicken Breast, diced into bite-sized pieces About 1.5 lbs
  • 1/4 cup Soy Sauce Use a Halal-certified brand
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, freshly grated
  • 2 tablespoons Vegetable Oil, for cooking
For the Vegetables
  • 1 red and yellow Bell Peppers, sliced
  • 1 medium Onion, sliced
  • 1 medium Zucchini, sliced
  • Sesame Seeds, for garnish
  • Green Onions, chopped, for garnish

Method
 

Marination
  1. In a mixing bowl, combine the diced chicken with soy sauce, minced garlic, and grated ginger. Let it marinate for at least 15 minutes to infuse the flavors.
Cooking
  1. While the chicken is marinating, turn on your Blackstone griddle and preheat it over medium heat. Add vegetable oil, allowing it to heat up.
  2. Once hot, add the marinated chicken to the griddle. Spread it out evenly and let it cook for about 5-7 minutes, stirring occasionally, until it’s golden brown and cooked through.
  3. To the same griddle, add the sliced bell peppers, onion, and zucchini. Sauté the vegetables for 5-6 minutes, or until they are tender but still maintain a slight crunch.
  4. Mix the chicken and vegetables, cooking for another 2-3 minutes to let the flavors meld. Remove it from the griddle and serve immediately, garnished with sesame seeds and chopped green onions.

Notes

Switch up the vegetables based on what's available; broccoli, mushrooms, and snap peas work well as substitutes. Marinade the chicken overnight for deeper flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
