Preparation
- Cook the bacon in a skillet over medium heat until crispy (about 6-8 minutes). Remove and drain on paper towels.
- Lay out the slices of bread on a clean surface. Spread a thin layer of softened butter on one side of each slice.
- On the unbuttered side of two slices, layer shredded cheddar cheese, followed by crispy bacon, a few blackberries, and more shredded cheese on top.
Cooking
- Place the remaining slices of bread on top, buttered side facing out. Heat a skillet over medium heat and add the sandwich.
- Cook for about 3-4 minutes until golden brown.
- Flip the sandwich with a spatula and cook the other side for another 3-4 minutes until both sides are golden and the cheese is melted.
Serving
- Let the sandwich cool for a minute, slice it in half, and serve warm.

Notes
For added flavor, consider adding a spread of basil pesto inside the sandwich before grilling. Store leftovers in an airtight container in the fridge for up to 3 days.
