  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons black pepper Adjust to taste
  • 2 tablespoons soy sauce Can use low-sodium soy sauce
  • 1 tablespoon olive oil For sautéing
  • 1 tablespoon garlic, minced Freshly minced preferred
  • 1 tablespoon ginger, minced Freshly minced preferred
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots) Use fresh or frozen

Method
 

Preparation
  1. In a medium-sized bowl, toss the bite-sized chicken pieces with black pepper, soy sauce, minced garlic, and minced ginger. Let it marinate for at least 10 minutes.
Cooking
  1. In a large skillet or wok, heat the olive oil over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through.
  2. Add the mixed vegetables and continue to stir-fry for another 5-7 minutes until the vegetables are tender yet still vibrant.
  3. Season with salt to taste. Once cooked, remove from heat and serve hot.

Notes

For added flavor, garnish with sesame seeds or chopped green onions. This dish can easily be customized with other proteins or veggies.
