Main ingredients
  • 4 large large flour tortillas
  • 1 can 15 oz of black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup corn (frozen or canned)
Spices and seasoning
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
For cooking
  • Olive oil for cooking
Optional toppings
  • Sour cream and salsa for serving optional

Method
 

Preparation
  1. In a mixing bowl, combine the black beans, shredded cheese, corn, cumin, garlic powder, and a pinch of salt and pepper. Mix until fully incorporated.
  2. In a large skillet, heat a splash of olive oil over medium heat.
Cooking
  1. Place one tortilla in the skillet. Spoon a generous amount of the filling onto half of the tortilla. Fold the other half over the filling.
  2. Cook for 3-4 minutes on one side until golden brown, then carefully flip and cook the other side for an additional 3-4 minutes.
  3. Once both sides are crispy, remove from the skillet and slice into wedges. Repeat with the remaining tortillas and filling.
  4. Enjoy your warm Black Bean Quesadillas with a side of sour cream and salsa, if desired.

Notes

Experiment with substitutions, keeping an eye on your cooking temperature and avoiding overfilling to prevent spills. Store leftovers in an airtight container for up to 3 days or freeze for up to a month.
