  • 8 oz noodles (spaghetti or your choice) Use your favorite type of noodles.
  • 4 cloves garlic, minced Freshly minced garlic for best flavor.
  • 3 tablespoons soy sauce (or tamari for gluten-free) Tamari is a gluten-free option.
  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar Can be substituted with apple cider vinegar.
  • 1 teaspoon chili flakes (optional for spice) Adjust amount based on spice preference.
Garnishes
  • Green onions, chopped for garnish Adds freshness.
  • Toasted sesame seeds for garnish (optional) Enhances flavor and texture.

Method
 

Preparation
  1. Begin by boiling a pot of salted water. Add your noodles and cook according to package instructions until al dente.
  2. While the noodles are cooking, heat olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn it!
  3. Once the noodles are done, drain and add them to the pan with the garlic. Pour in the soy sauce, sesame oil, and rice vinegar. Toss everything together until the noodles are evenly coated.
  4. If you like a little heat, sprinkle in the chili flakes and give it another toss to distribute the spice.
  5. Plate the noodles and top them with chopped green onions and toasted sesame seeds if desired. Serve immediately.

Notes

For additional freshness, serve with a cucumber salad or crispy tofu. Leftovers can be stored in an airtight container for 3-4 days. Reheat in a pan with a splash of water or broth to maintain texture.
